Opening this Saturday, you can now see what chef Paul Virant has in store at his newest restaurant Vistro, in suburban Hinsdale. Meant to be a family-friendly bistro, the restaurant is evidently more casual than either Western Springs' Vie or Lincoln Park's Perennial Virant.
With a smattering of casual tables that sit atop a tile floor that signifies the bistro theme, the space gives off a relaxed refinement from the beginning. The main dining room is past the bar, featuring a wall of white-painted brick where the restaurant's logo sits. A 10-seat party table is in the back, just in front of the wood-fired brick pizza oven.
