Next: Trio tickets hit the online box office just over an hour ago and they are already a hot—and pricey—commodity. Two-tops for Next's replication of Grant Achatz's (and many other star chefs') cuisine at the defunct groundbreaking Evanston restaurant are quickly disappearing, despite a price tag that's over $1000 with tax, tip and standard beverage pairing.
Although one off-peak food tasting menu of the iteration costs $245, Nick Kokonas says that's standard operating procedure for each year's "grand menu" and costs the same as elBulli and Bocuse D'or did. A seat to Bocuse D'or was available for as low as $225, however. Chef de cuisine Dave Beran said in a June interview that "Trio was a really magical place partially because there was no budget," and the Next team is obviously sparing no expense to replicate that experience.
The Trio iterations runs through December 21 and tickets for dates through September are on sale now. As previously reported, Next will hold a Trio reunion party and tasting on September 2 for $115.
