Though tomorrow is officially the first day you can step inside Mercadito Counter, the "Mexican deli" from Mercadito Hospitality, you can see what it looks like today. With a menu featuring Mexican twists on American comfort food, the bright, colorful space looks nothing like your typical hot dog joint.
You can see the possibility of a franchise taking shape in the selection and placement of the tchotchke, which shares shelf space with cans and bottles of ingredients used. Featuring a good amount of vivid art lining the walls, one wall is even devoted to the ingredients in the restaurant's "The Mexican" (a bacon-wrapped hot dog). It all evokes a fun, casual spirit inspired by executive chef Patricio Sandoval's childhood in Acapulco.
