Graham Elliot's Special Berkshire Pork Duo at G.E.B.

In honor of Eater's inaugural Five Days of Meat, three Chicago restaurants have created heart-stopping protein-packed special dishes and put them on their menus for just this week. Graham Elliot and chef de cuisine Vinny Alterio have constructed a double whammy of pork at Graham Elliot Bistro.

Elliot describes their Berkshire pork duo as a Mediterranean play on traditional all-American barbecue. "People across the country hover around the grill and table to celebrate family and America," he says. "Seeing as chef Vinny Alterio and I have been leaning toward Italian and Mediterranean flavors at Graham Elliot Bistro, we felt it made sense to do our spin on this classic celebration."

Elliot and Alterio start with two cuts of pork: a chop and porchetta. And to finish it off, there's three side dishes: barbecued cannellini beans, fennel cole slaw, and potato salad with pancetta vinaigrette.

All of this is available as an entree for two people, for $50, all this week at Graham Elliot Bistro.
