Inspired by a food truck in LA that owner J Wolf would go out of his way to find, Da Lobsta now has its own truck and it hits the streets this Thursday.
The items on the truck menu are identical to the French Market location and will feature daily specials. Those specials could range from the lobster mac-n-cheese served at the Gold Coast location, to lobster and shrimp tacos, to ethnic variations of his signature lobster roll (Indian, Mexican, more).
The food truck will help with the company's off-site events. "It's a lot easier from an operational standpoint," Wolf says of using the truck for the company's catering and festival jobs. He also has plans to work with local bars to help bring lobster rolls to their hungry customers.
Wolf currently has two brick-and-mortar locations for Da Lobsta (in Gold Coast and in the French Market) and is looking to expand the brand, he says. The food truck "is a great way to test which markets make the most money," he says.
Look for Da Lobsta's truck around Grant Park this weekend during Lollapalooza.
