Pastry chef Thomas Raquel is moving on from Acadia—to the 21st-best restaurant in the world (according to San Pellegrino's World's 50 Best Restaurants List). Raquel will become the executive pastry chef at Le Bernardin on July 28, Eric Ripert's three-Michelin-starred seafood behemoth that's been rated four-stars by the New York Times for 20 years, Zagat reports.
This continues a monster year for Raquel, who won a Jean Banchet award in February for "Rising Pastry Chef of the Year." His last shift at Acadia was Saturday; Ji Yoon (The Gage, Henri, Blackbird) will take over.
Coincidentally, sommelier Jason Prah, also a Jean Banchet award-winner (Sommelier of the Year, 2012), worked his last shift at Acadia on Saturday night too. He's hoping to open his own restaurant soon.
