FULTON MARKET—The Betty, the new spot from Footman Hospitality that's coming to the Lumen space, now has an executive chef. That would be Rachel Dow, former sous at Avec.
Two dishes she's planning are charred endive with figs, blue cheese, sourdough croutons, black garlic and brown butter vinaigrette; and manilla clams with chile and tomato fumet, sherry, uni butter and grilled bread. Look for mostly small plates on the menu when it opens in the fall. [EaterWire]
RIVER NORTH—David Burke has promoted executive sous chef Dino Tsaknis to executive chef at David Burke's Primehouse, taking over for Rick Gresh, who left for the Virgin Hotel Chicago. There's no word on if he's planning any menu changes. [Tribune]
