"I want it to have a University feel," owner Colin Cordwell says as he takes a break from sorting through stacks of books. "It will be all about booze and literature." Cordwell is preparing to open his baby, the reconstructed Red Lion Pub, in around a month. Expect it to be the antithesis of the current bar scene near DePaul.
The long reconstruction process is finally nearing an endgame—the new buildout is all but finished and Cordwell is moving on to decorating the space with books and nostalgic English photos and artwork. It has the look of a quintessential English pub, full of high archways, beams, and a second-floor balcony that he intends to be home to lectures and other studious activities.
He still plans to serve 14 English and German beers on tap, some hard to find, and country English and French cuisine when it hopefully opens in just a few weeks.
