For the second time in less than seven months, one of Paul Kahan's chef de cuisines is leaving one of his restaurants to work on his own. Chef David Posey, a James Beard award finalist the last two years and Jean Banchet winner in 2013, is leaving Blackbird at the end of July, the Tribune reports. Chef Brian Huston left Publican in January to open Boltwood.
Posey is working on opening his own restaurant, according to the Trib, but details on that are few. Avec chef de cuisine Perry Hendrix will take his place and perform double duty with the goal of returning both restaurants to their more symbiotic past.
Posey will launch an 8-course "best of" menu at Blackbird on July 18 for two weeks. Stay tuned to read more about his next move.
