Paul Virant Opening Family-Friendly Bistro in Hinsdale

Paul Virant is tailoring his locally-sourced cuisine to fit a family-friendly restaurant in Hinsdale, according to Chicago Magazine. At Vistro, Virant is looking to make this new restaurant comfort food-based, with the James Beard-nominated chef riffing on family staples such as fried chicken, meat loaf, wood-fired pizzas and more.

Even though Vistro won't be as upscale as Virant's Vie in Western Springs and Perennial Virant in Chicago's Lincoln Park, it will employ the same philosophies. It remains to be seen if Virant's penchant for preservation will come into play.

Formerly Zak's Place, the plan is for the 80-or-so-seat Vistro to open in time for Labor Day. Staffing news is minimal now, but Virant is bringing over pastry chef Elissa Narow and bar manager Bill Anderson from Vie to head up the pastry and beverage departments.
