A couple loose ends from two of the most resounding shutters of 2013 are getting tied up. Knife & Tine, an interesting new restaurant with former Baume & Brix and iNG chef de cuisine Nate Park, is coming to the former Sprout space. Perennial Virant general manager Carissa Shaffer is leading the new ownership group.
Shaffer describes Knife & Tine as "an upscale American restaurant, designed to be progressive but fun and approachable without a drop of pretentiousness." She says that Park will begin tastings next week and is still working through the menu so specific dishes are still in the works.
They're giving Dale Levitski's former stomping grounds a facelift so expect Knife & Tine to look much different than Sprout. But it's far enough along that the team is already targeting an opening date—June 10. It'll be open seven days a week for dinner, serve lunch on weekdays, and weekend brunch—kids allowed.
