Wicker Park's Craft Pizza is set to begin slinging artisanal pies tomorrow in the former Haute & the Dog space. Starting in a soft opening, the new spot from Scott Toth (Lakeview's Pizzeria Serio) will officially open on June 3.
Craft's pizza features a 12-hour fermented starter for their pizza dough, intended for added flavor. As the restaurant will be open during morning hours and that dough will also be used in bagels that will be boiled and then baked. Additionally, they'll be serving up Sparrow Coffee to go along with those bagels.
The menu, which can be viewed in full below, offers 11 pies as well as a "build your own" feature, along with a couple of salads and some antipasti. The real star is the pizza, of course, which goes directly into an 800-degree oven to get "the right amount of crispy exterior and chewy interior," Toth says. Toth is using imported San Marzano tomatoes from Italy that are hand crushed for the sauce, along with aged meats and cheeses that will be sourced from Italy as well as locally. Taste it for yourself tomorrow.
