Fabio Viviani Unveiling Two Casual Spots, One in a Multi-Concept Cafe

For his next local move, Fabio Viviani is going casual. The celebrity chef and former Top Cheffer is opening two quick-service food spots in the Loop in short order named Mercato by Fabio Vivani.

One, in the Chase Tower Urban Market Cafe (10 S. Dearborn), held a grand opening on Monday. The other, scheduled to open on June 9 in the second floor mezzanine of The Franklin building (227 W. Monroe), will be one of seven food options in a multi-concept cafe named Rustle + Roux that also includes a Mercadito concept.

Mercadito's spot, named Mercadito Taqueria, offers a selection of tacos, guacamoles, ceviches, and more. Other options include two sandwich stations, an Illy coffee bar and a salad bar. Rustle + Roux will be open for weekday breakfast and lunch only and should be an outstanding food option for businesspeople downtown.

Mercato by Fabio Viviani serves individual pizzas, sandwiches, scratch-made pasta and salad. Check out two menus below.
