Tony Hu's empire is expanding beyond Chicago's borders with the planned opening of a Lao You Ju at The Palms Casino Hotel in Las Vegas. Eater Las Vegas broke the story yesterday and Hu later confirmed that Lao You Ju will take up the 4,372 square-foot space inside the Palms that has been the home of two failed Asian concepts.
Back home, Hu opened Lao Sze Chuan Evanston a little more than a month ago, brought on DMK restaurants to reconcept the shuttered Lao 18, and is readying Lao Sze Chuans for both Schaumburg and The Shops at North Bridge, which continues to be delayed. He now hopes the latter will open in July.
Hu is the second big-name Chicago chef to recently ink a restaurant deal in Sin City, joining Matthias Merges' Vegas strip location of Yusho.
