Nearly a year ago to the day you heard about an upcoming bike shop, cafe and restaurant coming to Milwaukee Avenue from a two-time ancien cyclist. The shop is open now (Ancien Cycles) and the restaurant and bar next door, although not open yet, has a high-profile chef on board: Pecking Order chef/owner Kristine Subido.
Subido will serve as executive chef, according to Bicycle Retailer, but tells Eater that Pecking Order will continue on as usual. Bicycle Retailer reports that Roll Out will serve "forward-thinking neighborhood food" such as burgers, stews and soups. Owner Scott McIntosh said last year that Roll Out will focus on variations of pho; McIntosh didn't respond to requests for updates so it's unknown whether that is still the case.
Expect craft beer, cocktails, served inside and in a beer garden. Roll Out is scheduled to open sometime in the summer.
