Last year, Cameron Grant won a Baconfest award for crafting the Chicago skyline entirely from pork. This year, Cameron Grant will cook Piemontese cuisine in Logan Square.
Grant, most recently the executive chef at Fresco 21 in Rosemont, will be the chef and a partner in the forthcoming Osteria Langhe on Armitage. He already showed his creativity in winning the best front-of-house award at Baconfest 2013, a display that also included bacon roses, but ownership is also confident in the Scotland native's ability to cook Northern Italian cuisine.
Grant's opening menu will include "Lumache Slow Food" (snail confit with arneis, leeks, grilled bread); fried frog legs with salsa rossa; braised beef cheek with ribs, tongue, oxtail, salsa verde, puff pastry and brodo; and roasted duck with barolo honey and gorgonzola.
Osteria Langhe is on track to open next month in the former Brand BBQ space.
