A change is coming to Trenchermen's bar program as Tona Palomino will be stepping down from his position as beverage director. Palomino has been with the restaurant since 2011, even before the restaurant opened. Executive chef Patrick Sheerin gave a statement on his departure, calling Palomino's departure "bittersweet."
Sheerin added that he had "an integral role in the development of all aspects of the restaurant," and that his "spirit of creativity helped shape the entire beverage program and he has been a great sounding board for collaboration." "We'll miss the spirit of togetherness that he brought to the Trenchermen family," Sheerin says.
Palomino's last day is on April 12, so there's time to wish him well in his future endeavors. He will stay in Chicago, moving into a position with Tenzing's sake division. Trenchermen hasn't picked a replacement yet.
