Ownership of Wasabi in Logan Square are building a restaurant centered around a lighter version of their uber-popular ramen. Ramen Takeya, two doors down from Publican Quality Meats, will be a small "ramen shop like in Japan," co-owner Satoko Takeyama says.
Ramen Takeya will serve four types of ramen, mostly chicken-based, and a vegan selection. The menu will also include small plates, including dumplings and bao, as well as a cocktail program with beer and wine.
Takeyama says they've kept an eye on the space in the trendy restaurant neighborhood for while, noting it was "perfect for a ramen shop." It will hold 40 seats and a combination ramen and beverage bar in front of an open kitchen.
She also says that they will keep ramen prices low and "focus on ingredients" instead of profit, but it will also be "versatile for people who want a sit-down meal." They hope to have Ramen Takeya open in June.
