Former Embeya Sous Chef Takes Over for Lee Wolen at The Lobby

There's finally a new chef de cuisine at The Lobby, filling Lee Wolen's large shoes after he exited to reboot Boka around four months ago. Seth Moliterno, who worked under Thomas Keller and Mindy Segal and most recently was executive sous at Embeya, is that man.

Moliterno, who started this week, has roots in classical French cooking and will launch a "totally new menu" in a few weeks. The Peninsula's executive chef Mike Wehrle had been running The Lobby kitchen in the interim.
