There's a new chef running the kitchen at Yusho, one with deep roots in Japanese cuisine in Chicago. Proprietor Matthias Merges has brought on Harold Jurado (Chizakaya, Jellyfish, Japonais) to helm the kitchen operations at his acclaimed Yakitori-inspired restaurant, as well as "have a big part" in the development of Yusho Hyde Park. Merges is now hoping to open the 53rd Street expansion in August.
Merges says that Jurado "stood at the forefront of the izakaya revolution in Chicago," making him a natural fit to cook at Yusho. Jurado shuttered Chizakaya in September 2012, was the opening executive chef at Jellyfish, and recently worked at Nico Osteria.
Jurado replaces Brian Lhee, who is now at Yusho Las Vegas.
