With new spots like Sportsman's Club and the upcoming Leghorn, Ukrainian Village continues to build momentum as a neighborhood destination. Today marks the opening of The Winchester, an (eventual) all-day restaurant from owner Chris Pappas and chef Greg Bastien.

Pappas and Bastien (Tavernita) have rolled out breakfast service first, catering to neighborhood people and commuters on the go. Bastien's first menu (below) focuses on simple organic pleasures sourced locally: baked goods, waffles, egg sandwiches, frittatas, coffee drinks. The smoked trout sandwich and avocado toast are eye-catchers.

Pappas held onto the two-floor building for years, along with partner and builder Dan Sheehy who spearheaded construction, resulting in a simple, bright, comfortable and sophisticated place for a meal. Around 65 downstairs seats are at artisan wood tables beneath an exposed-brick backdrop. A 20-seat private dining area is on the second floor.

Brunch service will kick off Sunday; ownership hopes to launch lunch in two weeks and dinner by the end of the month.
