Cosmo Goss is Taking the Torch at The Publican

The Publican chef de cuisine Brian Huston's replacement is coming from the same kitchen. Cosmo Goss, the opening head butcher at Publican Quality Meats, will take the mantle on Monday when Huston leaves to prep his first restaurant, Boltwood, the Tribune reports. Goss recently served as executive sous chef at both Publican and PQM.

Goss's promotion is another example of One Off Hospitality's ability to cultivate talent and promote from within, including Erling Wu-Bower (Nico Osteria) and Justin Large (director of culinary operations). The Trib also reports that The Publican will host the James Beard Awards finalists announcement on March 18.
