A Chicago bar will be selling its own Fernet in a couple of months. That bar is the recently opened SideDoor, helmed by beverage director Andrew Macker, in a collaboration with Evanston's FEW Distillery. Expect their version of the uber-trendy Italian apertif to be ready in a minimum of 8-10 weeks.
FEW founder Paul Hletko says it won't be "quite as minty" and have "less of a syrupy mouthfeel" as Fernet Branca, but is aiming to keep the richness. He predicts the Lawry's gastropub "will soon be one of the city's preeminent cocktail bars."
The SideDoor/FEW Fernet will eventually be available for retail purchase too. Look out for FEW's collaborations with Big Star (Amaro) and The Publican as well.
