Changes are afoot at Graham Elliot Bistro. With conceptual moves on the way to Graham Elliot's only Chicago restaurant, G.E.B.'s opening and longstanding chef, Jacob Saben, is on his way out. Saben worked for Elliot for more than five years, moving over from the celebrity chef's flagship restaurant for the bistro's opening in 2012.
On New Year's Eve, which was also Graham Elliot's last night of service, Elliot said that G.E.B. would become more like his original restaurant and some of the signature menu items would find a home at the bistro. Some staffing changes have also come to G.E.B., including new management.
Now his longstanding chef is exiting the restaurant too; Saben's last day is March 9. "After working side by side with (Saben) for over 6 years, I can honestly say not only is he a great chef, but a great friend as well," Elliot says. "The Bistro will be undergoing some exciting changes, which we'll be announcing soon."
