The Chicago restaurant inspection gods claimed another victim, but owner Jason Prah says that pre-opening progress of Bascule Wine Bar is finally in the home stretch. Prah and co-owner/co-acclaimed sommelier Scott Harney originally planned to open their bridge-themed wine bar and restaurant in the former Union Union space in September and Prah is now hoping to open the doors on December 29.
Construction is finished at 1421 W. Taylor, the menu is done, and exterior signage could arrive as soon as tomorrow. He says his core sommelier, bar and management team is in place but they're still hiring more staff.
When it opens, expect an affordable international wine program alongside chef Michael Burkauskas' seafood and meat dishes in both small and large plates, some using a wood-burning oven. Stay tuned for more.
