Revealed: Sarah Grueneberg Restaurant Name, Site, Target Opening Date

It's coming to Madison Street next spring.

Details are starting to come together for former Spiaggia executive chef Sarah Grueneberg's first restaurant. While the concept is still "in flux," the "Top Chef" finalist has settled on a name and confirmed the address for her West Loop venture: and it's not on Randolph Street.

The restaurant is actually two blocks south of Randolph, at 1020 W. Madison on the corner of Carpenter Street. This space, which was once slated to hold a restaurant from ex-MK partner Caryn Struif (now of Ceres' Table), is a vintage brick building with a 3,800-square-foot main floor.

Grueneberg is naming her restaurant Monteverde, which translates to "green mountain," and is hoping to open in spring 2015. All Grueneberg or reps will confirm about the concept is that it's "unique"—but do expect Italian food, which is obviously what she cooked for years at Spiaggia, to play into it in some way.
