Eater National caught up with Rick Bayless in Cayman and chatted about his two upcoming restaurants, his podcast with Steve Dolinsky, and the state of Mexican cuisine. Bayless says he still can't reveal details about his West Loop project (opening in nine months to a year) and that his Wicker Park XOCO (opening in three months) was delayed because they had to "literally build it from the basement up again to the first floor so that it wouldn't fall apart."
