Expect a few wrinkles when the IO Urban Roofscape lounge opens atop the swanky Godfrey Hotel on February 1. The menu features chef-prepared "Cocktails from the Kitchen," food that chef Riley Huddleston describes as clean versions of "Chicago's local favorites," and will employ a host of unlisted "secret ingredients" he says no one else in town is using, such as the West Coast hybrid fruits mangorange and mandarinquat.
Although bartenders will make basic drinks, all nine classic-leaning cocktails on the "Cocktails From the Kitchen" section will be made by, you guessed it, chefs in the kitchen. Said chefs will measure ingredients by weight and test the drinks for acid and alcohol levels, a process Huddleston, who worked a stint at The Aviary between Prasino and IO, believes is more scientific, more organized, and faster than traditional bartenders. "10 years from now everybody will be doing this," he predicts.
Starters, burgers and "sams," salads, and entrees make up the food sections. Price points are manageable: starters run from $5-15 (including a $10 truffle mac and cheese with shaved black truffles); entrees from $16-26. Huddleston insists that there are "no gut bombs" among the heavier items.
