Jam's Jeffrey Mauro Partnering With Homaro Cantu at the Forthcoming Berrista

Homaro Cantu has recruited a renowned breakfast chef to help make his sugar-free pastries. Jeffrey Mauro, chef/owner at the Logan Square breakfast spot Jam, will become a chef/partner at Cantu's upcoming coffee and pastry concept Berrista. Mauro will work at both establisments simultaneously.

Although both will cook and create recipes, the move is part of Cantu's desire to step into more of an executive role, evidenced by recent chef promotions at both Moto and iNG. Mauro was a natural fit to helm Berrista: he worked alongside Cantu at Charlie Trotter's and has breakfast and pastry expertise from Jam.

Berrista will employ the "flavor tripping" West African fruit the "Miracle Berry," which changes sour flavors to sweet, in order to create sugar-free pastries and drinks. The Old Irving Park location is scheduled to open in the spring.
