Patrick Fahy is moving from a local two-Michelin-starred restaurant to the No. 47-ranked restaurant in the world. Fahy, former pastry chef at Sixteen, Café des Architectes, avec and Blackbird, will become the next pastry chef at Thomas Keller's fine-dining institution, The French Laundry. A French Laundry representative says he will replace Milton Abel in the iconic California kitchen next month.
Fahy made his mark in Chicago's pastry scene with continuously innovative desserts, including his "Smoking Affogato" at October's Meals on Wheels Celebrity Chef Ball. He left Sixteen in early December; the restaurant has named Aya Fukai as his replacement.
Fahy worked in The French Laundry kitchen in 2008-2009.
