Greektown Vets Tap Former Leopold Chef for Bellwether

Aiming to be the leader of the flock in Streeterville, details are coming together for Bellwether inside the former P.J. Clarke's space. After opening Vinyl in River North in July, Greektown vets Nick Tsoukalas and Chris Liagridonis (Athena) have hired former Leopold chef Jeffrey Hedin to run the kitchen and menu development for their second new project.

Hedin, who most recently was kitchen manager at Juno, is prepping contemporary American seasonal menus featuring some items sourced from local farms in hopes of appealing to the working professionals, neighborhood residents, and tourists that frequent Streeterville establishments.

He's bringing some flavors from Leopold (mussels and cassoulet) to serve alongside seafood (ceviche, tuna tartare, oysters) and starches (risotto, gnocchi). As the word "bellwether" is drawn from the Old English meaning of "leader of the flock," he's also adding lamb and sheep dishes.

Scheduled for an October opening, expect lunch and small plate prices in the teens, with dinner entrees topping out in the mid-20s. Renovation of the 200-seat former Irish concept is nearly complete, Hedin says to expect more light and an open layout when it opens east of Michigan Avenue in a few weeks.
