According to a realtor, a new tenant signed a 10-year lease for the Salud Tequila Lounge space "around two months ago." Multiple sources say the new tenant is Rick Bayless himself. While a Bayless representative confirms that he's opening a new restaurant, they decline to reveal the location or concept, only saying that it won't be in River North. Bayless was also reportedly negotiating a lease on Randolph.
This new spot will be Bayless' first new standalone Chicago restaurant since Xoco in 2009. The host of Mexico—One Plate at a Time has focused on opening Fronteras Frescos and Tortas Fronteras in airports, Macy's, and Northwestern, as well as Red O in California. Bayless reps say they'll reveal clues via social media. Construction hasn't started yet—stay tuned.
