Chef Changes Hit Rootstock, Prasino, and More

HUMBOLDT PARK—Mike Simmons, formerly of Lula Cafe, is the new executive chef at Rootstock. Simmons' new dishes include matsutake carpaccio with foie gras, pinenuts, saba and parmesan; and grilled mackerel with cherry tomatoes, fennel and basil. [EaterWire]

WICKER PARK—Executive chef Riley Huddleston is out at Prasino on Division as of last Thursday night. In addition to Prasino Wicker Park, Huddleston worked with Covo, the Prasino catering program, and is a partner in the Boise Fry Co. chain. [EaterWire]

Alex Shalev, most recently at Cru Kitchen & Bar (and Park Grill and Sola before that), takes over for Jason Myers, who only held the position for five months.
