Word is coming out on former Goose Island brewmaster Jared Rouben's brewery. Moody Tongue Brewing, located in The Glass Factory (2136 S. Peoria) in Pilsen, will continue Rouben's legacy of culinary-focused beer he began at Goose Island. The brewery is set to launch in winter.
The name Moody Tongue is a play on words to describe Rouben's and similar beer drinkers' discerning palate. "Moody Tongue is a nickname for everyone who thinks twice about flavor
and aromatics," Rouben says. "I have a Moody Tongue and so do you."
As a graduate of the Culinary Institute of America, Rouben implemented various cooking techniques into brewing, as well as collaborating with big-name chefs including Rick Bayless, Giuseppe Tentori, and Fabio Viviani. Expect similar creations in his new venture.
Rouben left Goose Island in January with an eye towards opening his own brewery. Now that it has come to fruition, check back soon for more details.
