Coming this fall to Ukrainian Village diners: an all-day dining spot with a kitchen helmed by former Tavernita chef de cuisine Greg Bastien. Bastien will roll out "comfort-based" menus utilizing local purveyors in order to open The Winchester, which he describes as a "neighborhood spot," in late September or early October. Chris Pappas owns the bi-level space and will be the opening GM and beverage director.
Bastien says that The Winchester will eventually serve all three meals; dinner service will begin down the line and focus on approachable, seasonally-driven cuisine. Expect grab-and-go items and local coffee purveyors at breakfast, a straightforward lunch menu, and a signature meatloaf. Beverage options will focus on wine.
Bastien and Pappas appeared under The Winchester name at a charity supper club event on August 4. Look for a Kickstarter campaign in about two weeks.
