CH Distillery, Chicago's first distillery with a cocktail bar, is now open. You will now be able to try the vodka, gin (two types), rum and whiskey that founders Tremaine Jackson and Mark Lucas are distilling in-house.
The promise is of spirit-driven cocktails taken to a whole 'nother level courtesy of beverage director Krissy Schutte and consulting mixologist Kyle Davidson (Blackbird, The Publican). Some of the concoctions from the house-made liquor they're putting down are Earl Grey gin (The Baron Takes Tea), serrano chili vodka (Rhymes With Orange) and cinammon vodka (Czech Mate).
Executive chef JP Doiron (avec, Perennial) along with consulting chef Jesse Katzman (avec, as well as down the street at West Loop Salumi) have worked up a small, concise menu of bar snacks (shitake pate, gravlax, shrimp cocktail, as well a selection of meats, cheeses and nuts).
CH Distillery's products will also be distributed wholesale by Tenzing Wine & Spirits for purchase at your local fine spirits retailer. The cocktail bar will seat 48 and offer tours ($15 and you get a shot of ice-cold vodka and a pickle at the end) on Saturdays. They are open Tuesday through Thursday from 5 p.m. until 11 p.m., Friday and Saturday 5 p.m. until 12 a.m., and close Sunday and Monday.
