Eiji Takase is the New Japonais Chef

More than four months after Miae Lim left, the Japonais team is announcing a new chef. Eiji Takase, a veteran chef from Tokyo via New York City and Las Vegas, is now heading the food program at the riverside contemporary Japanese concept.

Following his work in Tokyo restaurants, Takase arrived on American shores in 1984, cutting his teeth at a New Jersey Japanese grocery. He has since cooked at multiple New York restaurants, at Shibuya in Sin City, and was a partner at Sushi Samba.

Little is currently known about possible menu changes at Japonais. He takes over the kitchen from prior chefs that include Gene Kato, who left in 2011 and opened Sumi Robata Bar in January.
