It's hard to believe there is any real estate left on Randolph street, but the places keep coming. West Loop Salumi, the first USDA-certified salumeria in Chicago opened for wholesale and online business on Thursday with the retail side to open in mid-July. Greg Laketek trained under Italian Salumi master Massimo Spigaroli and partnered with Jesse Katzman (Avec, Publican) to open this old world salumi shop.
West Loop salumi will distribute to places like Half Acre Brewery and the upcoming CH Distillery. However, the retail shop will not sell sandwiches as to compete with the surrounding lunch spots. They are currently sold out of most of their online selection but have a few salamis and whole muscle choices available.
