The same folks who brought Oodles of Noodles to the good people of Lincoln Park are bringing a peculiar new concept to the Galbi City space—Thai-Mexican fusion under the name Thai Burrito. Hoping to open in two weeks, a cartoon boxing burrito has made it's way onto the papered Galbi City storefront that hides the marriage of Far East and Latino cuisines lurking beneath. Expect that paper to come off June 14 or June 21.
Manager Kathi Ludwig explains that the figurative light bulb went off when her Mexican chef, who used to cook Mexican cuisine for her, said "why don't we do (Thai and Mexican food) together." This prompted her response of "wow, this is awesome. Nobody has done it yet."
Thai Burrito will serve—you guessed it—Thai burritos. But it will also have a create-your-own stir fry bar at lunch, Mexican breakfast Friday through Sunday, and a small Thai-meets-Mexican menu at dinner, all in a fast-casual setting. Menu items will include a fried rice burrito and chili shu mai in an egg roll wrap. It will be BYOB. Ownership hopes the boxing burrito will be a knockout.
