Another detail is revealed at the mysterious project coming together in the old Swirl Wine Bar. Veteran mixologist Sterling Field has signed on the project as co-beverage director, joining former Sepia bar star Josh Pearson. Field had his last day pouring drinks at Carriage House on April 20, his new position was rumored and subsequently confirmed by a Carriage House staffmember.
Field, Pearson, and co-owner Nader Hindo declined comment on the hiring and other project details. The multi-floor space on 111 W. Hubbard is still under construction and the target opening date is unknown. A third high-profile barkeep is rumored to be joining as well. How all of them will fit together in the project and divide responsibilities will be a fascinating development, as will other details that are still under wraps.
Field took over the Carriage House program from Michael Simon in January and is a former bartender at Sable. Stay tuned.
