An OON Sous Chef; New Protein Bar in Merchandise Mart; More

WEST LOOP—Staffing continues to fall in place for the long-awaited OON. Sean Currie (Bin Wine Cafe', Moderno), chef Matt Eversman's classmate at Le Cordon Bleu, will be his right-hand man as the OON sous chef, following the hiring of Jon McDaniel as General/Beverage Manager. RIVER NORTH—The tenth Protein Bar location is opening up tomorrow in The Merchandise Mart. The first 50 customers in line at 11 a.m. will receive a free quinoa bowl. [EaterWire]
