The chef changeover wheels were in motion long before yesterday at The Monarch, as a new chef, Michael DeStefano, was already in place minutes after the wires lit up about Andrew Brochu's departure. As it turns out, their new spring menu, launching tonight, has DeStefano's fingerprints all over it.
DeStefano was the natural replacement, cooking alongside Brochu for years at Kith & Kin, EL Ideas and Graham Elliot before becoming Brochu's sous chef at The Monarch. The new menu features six dishes (blue crab, kung pao wings, chilled English pea soup, rainbow trout, grilled pork blade steak, crispy confit chicken thigh) that are DeStefano's creations. The menu is launching tonight, look it over below first.
