Fresh off his shared James Beard award, Paul Kahan had an extensive chat with Eater National. His upcoming project, originally slated for the Sutton Place Hotel, has been relocated to the Thompson Hotel and is opening in November.
He's keeping other details under wraps for now, saying "We're kind of figuring out exactly how we want to do that, who's going to be in charge of the kitchen, etcetera etcetera. In the past, I get so jazzed up about our new concepts that I tend to blab my big, fat mouth all over town, and invariably somebody opens up a concept that's similar before we get to it because we move kind of slow and deliberately."
Kahan also talks about his hectic schedule between Publican, Publican Quality Meats, Avec and Blackbird, his charity work with Pilot Light, and of course the James Beard Awards. Check out the full interview here. [~E~]
