This is a first in Chicago, and a rarity in the whole country—private label sake. Arami, the sushi spot on Chicago Avenue, is now the first restaurant in town to offer private label sake. Naming it "Ichi No Torii" (meaning "the first gate"), it's produced by Ohmuraya Brewery in Shizuoka, Japan specifically for Arami. The variety is tokubetsu junmai genshu, a traditional rice sake with hints of hazelnut, soft cocoa, and umami. They produced 180 hand-numbered bottles.
Private label sake is mostly seen in the San Francisco Bay Area and New York, and most well-known at the MGM Grand Hotel in Las Vegas, which carries three. The first in Chicago is available now at Arami.
