David Burke is adding another restaurant to his portfolio. In addition to his upcoming sandwich spot in the renovating James Hotel, it's coming out that he's opening a farm-to-table restaurant in the upcoming Indigo Hotel at 168 N. Michigan next spring. It will reportedly serve Midwest-sourced meats like duck, chicken, fish, pork, and cured meats. The two-floor space will house a 150-seat dining room and a 50-seat submerged lounge and wine room. Burke currently has eight restaurants around the country.
The upscale sandwich place at the James has a name now: Burke's Bacon Bar. The menu there is still under the testing and construction phase. Look for more in the coming weeks as it nears its mid-summer opening.
