Following up on their successful recent cookbook-themed "The Lee Bros. Charleston Kitchen" dinner, Big Jones is at it again. The next event is called the "Trash Fish Dinner" and features an eight-course family-style dinner helmed by Big Jones chef Paul Fehribach. Alongside for the event will be Avec's Erling Wu-Bower, Paul Kahan, Bruce Sherman of North Pond, Prairie Grass Café's Sarah Stegner and George Bumbaris, Laura Piper from Trattoria No. 10, Michael and Patrick Sheerin (Trenchermen), and Paul Virant.
Benefitting the sustainability-focused chef's network Chefs Collaborative, seafood for the evening will be provided by Fortune Fish and Gourmet. Each chef's course will feature lesser-known fish (also known as "trash fish" like dogfish, smelt, speckled trout and triggerfish. Event sponsors include American Harvest Organic Spirit, the Environmental Defense Fund, and the Monterey Bay Aquarium and Seafood Watch.
