As part of Eater's 2013 burger week, chefs at a few Chicago restaurants that don't serve burgers agreed to make a special limited-edition burger, served this week. Here now is the Hamburguesa Verde from Mercadito.
For Eater's 2013 burger week Mercadito chef Patricio Sandoval employed his upscale latin spin on a patty, grinding it in-house with 50 percent short rib, 25 percent chuck and 25 percent rib eye with epazote, garlic, and onions. He tops it with grilled ramps, rajas poblanas, caramelized onions, manchego cheese, and a lobster jalapeño emulsion.
"A burger is probably one of my favorite foods on the planet," Sandoval says. "For this special burger, we utilized fresh flavors of spring with grilled ramps and an extra bit of richness from the lobster jalapeño emulsion." It's available through the end of the week at Mercadito.
