As part of Eater's 2013 burger week, chefs at a few Chicago restaurants that don't serve burgers agreed to make a special limited-edition burger, served this week. Here now is the Surf + Turf Burger from Union Sushi + Barbeque Bar.

A variety of Japanese-inspired cooking techniques come together at Union Sushi + Barbeque Bar and their first burger, made special for Eater's Burger Week, puts them between a bun. Worachai Thapthimkuna (Chef Chao) was inspired by a classic surf & turf, slanting it to fit with the culinary theme of the edgy River North Japanese spot with an American twist.
Chao forms a patty made with wagyu beef and tops it with fried oysters, cheddar cheese, black pepper sauce, garlic mayo and pickled onion to continue his theme of pairing aggressive flavor profiles. The aforementioned bun is of the garlic toasted pretzel variety. Baby arugula salad and fried potato strings with dehydrated cheddar are on the side. Oysters are a fixture for Union, their $1 oyster special on Monday-Saturday from 5-6:30 p.m. is one of their most popular specials.
The burger is on both the lunch and dinner menus now through April 22 at Union Sushi + Barbecue Bar for $15.
