Tim Graham is taking his fine dining and food science background to the Langham Hotel. A veteran of the kitchens in Tru and Paris Club, Graham will open a more casual Mediterranean concept on North Wabash, drawing from the myriad flavor profiles that surround the sea that divides Europe and Africa, Chicago Magazine reports. Calling the concept "casual elegance," price points will range from $24-28 in order to tweak casual Mediterranean fare (pita balloons and flaming chicken saganaki, for example) with less "rigidity" than Tru. He'll leave Lettuce Entertain You and hope to open in mid-July.
Other menu themes include a variety of benedicts for brunch and a variety of fish at dinner, including crudos. The space will include an eight-seat kitchen table for a personal view of Graham and his new cuisine. More to come.
