A new restaurant has quietly popped up in the former Erwin Cafe space on Halsted, and it's a Vietnamese spot. Macku Chan, the chef/owner of Lincoln Park's Macku Sushi, is the guy to move in. There's few details of the concept or space, which was cozy under Dreschler's steward.
While Chan is formally trained in Japanese cuisine he's going back to his roots to create dishes native to his homeland. Watch for Vietnamese cuisine that incorporates other Asian influences in dishes like oysters with three sauces (black pepper, fish, and vinegar); Vietnamese crepe with seafood, bean sprouts, onions and fish sauce; seared duck breast; ornate carrot soup; and a spring roll bar. Vietnamese is certainly a cuisine that's lacking in town, aside from banh mi sandwich spots, so look out for the new addition.
